This bottle-fermented NV sits is a richer style and has all the trimmings of toast development with plenty of pinot noir’s savoury red fruits, pinot meunier’s earthy notes and just the right amount of sourdough bready complexity. The palate brings the chardonnay fruit to the fore, before rich yeasty autolysis takes over, adding woody notes and baking spices. Charming creamy texture, rich, even and long.
